Brown mustard seeds are used as a spice in many ways, especially in India, and have a piquant flavour. However, their pungency disappears very quickly during cooking, so they should only be added towards the end of the cooking time. In India, the grains are roasted in a dry pan before use, which gives them a unique nutty aroma (cover the pan for the "popcorn effect"). Particularly popular for refining many vegetable dishes.
