White pepper is fully ripe pepper from which the skin has been removed. To produce it, the ripe red pepper berries are soaked in running water for about eight to fourteen days so that the skin comes off through rotting. They are then mechanically peeled, dried and partly bleached in the sun. The rather long process of soaking, often in polluted running water, can be shortened by treatment with pectinases.
